Sparkling Wine Production

After the wonderful response to the premier sparkling wines that we produced in 2021; we are proud to continue this new product series to celebrate all the special occasions in your life. We are working on our 2022 and 2023 sparkling wines this month as we sell the last of the 2021 vintages. In the works we have a 2022 Sparkling Chambourcin Rose, which will be released this year; a 2023 sparkling white wine made with Aurora and Vidal Blanc as well as a 2023 Sparkling Brut Rose that will be released next year! Creating a sparkling wine is a long and intricate process but it is well worth the wait.

Spring Pruning in the Vineyard

As the weather warmed up, we ventured out into the vineyard to assess how well the grape vines survived the winter and began our rough pruning. After a relatively mild winter with no outstanding temperature extremes, we are pleased to report that our vines made it through another Indiana winter and look ready for Spring. If we don’t experience a late frost like in 2023, our harvest should be bountiful.

Rough Pruning involves cutting out fruiting canes from last year that we know we don’t want this year; as well as pruning out any dead vines or cordons. We will leave the canes long as we go through the first month or two of spring. This delays bud growth which can save us from late spring frosts like we experienced last year. Then, once we are past our fears of frost, usually around Mother’s Day, we will go through and do another round of pruning. This second pruning we will cut all the vines back to 2-3 buds for each shoot to ensure that the vine is balanced and not going to be overstressed with too much crop.
